The diner cook in Tulsa put a wet paper towel under my cutting board and I just stared at him
Stopped at a little diner in Tulsa on a road trip and watched the cook through the pass while I waited on my eggs. He grabbed a wet paper towel, laid it flat, and set his cutting board right on top before dicing a pile of onions. I asked him why and he said the board never slides, not even once, and the towel does double duty catching the juice. So I tried it at home with my cheap plastic board that usually dances around the counter, and I diced 4 onions without it budging an inch. Now I keep a stack of towels just for this and cleanup is just tossing the soggy one in the wash. Do you all use a damp towel, a silicone mat, or something else to stop the board from skating around?
