Appreciation post: The old bindery shop on Elm Street
I walked by that bindery shop downtown last weekend and noticed they finally closed after 40 years. The guy who ran it used to show me how he sharpened his knives on a whetstone, no fancy tools needed. Anyone else miss those little shops that taught you the real tricks?

I used to think powered sharpeners were just faster and better, until that bindery guy let me try his old manual one. He had these three different grit stones, and he'd spend like 10 minutes on just one blade, explaining how the edge gets a more even angle without overheating. Now I have a little whetstone at home and it takes me forever but the knives actually stay sharp longer. It's one of those things that seems like a waste of time until you actually do it.
