PVA glue dried out in the jar mid-project, lost a whole afternoon

Started a rebind of a 1980s sci-fi paperback Wednesday and went to grab my PVA, only to find the jar had this thick crust on top. I pried it off but the glue underneath was lumpy, so the spine fabric ended up with these weird bumps. Had to soak the covers, scrape everything clean, and start over with fresh adhesive from the shop down on 4th Street. Anyone else store their PVA with a bit of water on top or am I just asking for this to happen again?
