Hydroponics vs soil for my peppers, and soil won by a mile

I tried a full hydroponic setup for my jalapenos this spring and they just never had the same kick as the ones I grew in plain old potting soil. The hydroponic ones grew faster but the flavor was flat, like all that nutrient water just made them bland. Has anyone else noticed soil-grown peppers tasting way better?

Honestly, the part about "soil microbes do something to the chemistry" really hits home. I had the same bland results with my ghost peppers in hydro, and swapping back to dirt brought back that real heat and complexity. Tbh I think the microbes and organic matter just build way more flavor than any bottled nutrient ever could.

Used to be all about hydroponics, thought it was the future of everything. Then I grew a batch of habaneros in dirt and the hydro ones just tasted like crunchy water by comparison. A buddy who runs a commercial greenhouse told me the soil microbes do something to the chemistry that plain salts can't mimic. Still think hydro has its place for lettuce and herbs, but for peppers the soil flavor is just better.
