Sitting in a Starbucks in Chicago, I watched a local bakery chain kill their own brand with a single menu change.
They swapped their signature sourdough for a cheaper mass-produced loaf and within 3 months the line out the door was gone. Anyone else see a business destroy years of brand equity for a quick margin boost?

Did you ever see that bakery try to win people back or did they just let the whole thing slide? I saw a local pizza place do the same thing with their mozzarella... swapped it for something cheaper and within a month regulars were posting about it online. It took them almost a year of sourcing better cheese and running specials to get even half their old crowd back.
