I finally figured out why my sourdough starter kept dying

I've killed three sourdough starters over the past 6 months. Last week I was about to toss another one when I noticed my tap water in Phoenix has a ton of chlorine in it. Switched to bottled water and the thing finally bubbled up after two days. Has anyone else run into water quality messing with their fermentation projects?

Read an article from a guy in Portland who tested his tap water and found chloramine in it. Apparently that stuff is worse for fermentation than regular chlorine because it doesn't evaporate as fast. He said letting the water sit out for 24 hours works for chlorine but not for chloramine. Used bottled water for my kombucha and it made a huge difference too. Also heard some people using a simple carbon filter or adding a crushed up vitamin C tablet to remove it. Worth checking your city water report online to see what they actually add.

My buddy in Austin had the exact same problem with his kombucha.
