My $5 grocery store rotisserie chicken hack turned into 4 meals last night
I used to just eat the chicken straight from the container and toss the bones lol. Last week I decided to actually break it down and boil the carcass for broth. Got 2 chicken dinners, 1 pot of soup, and 1 lunch wrap out of that one $5 bird from Aldi. Has anyone else stretched a rotisserie chicken further than they thought possible?

The soup was probably the best honestly... I simmered that carcass with some onion skins and carrot ends I had saved in the freezer, strained it, then added egg noodles and shredded the little bits of dark meat that were stuck in the bones. That broth had so much flavor from the skin and seasoning already on the chicken. Made a big pot that lasted me two lunches. Just wish I had started saving veggie scraps sooner, makes a huge difference in the broth.
