My bean week from hell that turned into a blessing

Last Tuesday I was dead broke with $12 to my name until payday Friday. I bought a 2 pound bag of dried pinto beans for $1.89 and cooked the whole thing with some garlic powder and an onion I had. Ate beans for breakfast lunch and dinner for three days straight - was so sick of them by Thursday night. But when I added up what I saved I realized that bag made 8 solid meals for less than 25 cents each. Anyone else ever been forced into eating the same cheap thing for days and find a keeper recipe?

It's wild how being dead broke can accidentally teach you the most useful stuff. I've been noticing this pattern more and more where the things we're forced into end up being the things we need most in the long run. Like, I had a friend who started biking to work because she couldn't afford gas for a month and now she's been car-free for three years and is way healthier for it. That bean week probably rewired how you look at food budgets forever. Once you see how far a couple bucks can stretch, it's hard to forget it. Sometimes the best lessons come from the tightest spots.
