My leftover roast turned into three dinners and a soup

Last Sunday I made a pork shoulder in the slow cooker because it was on sale for $11. By Tuesday I had pulled pork sandwiches, Wednesday was tacos with the same meat and some canned corn, and Thursday I boiled the bone with a bag of frozen veg for soup. The soup alone fed me lunch for two days. Has anyone else stretched one protein source that far or am I just cheap in a good way?

That's not cheap, that's smart cooking right there... I love seeing somebody get every last bit of use out of a good cut of meat. The bone broth move especially, that's where all the flavor hides. Pork shoulder is honestly one of the best value buys out there, it just keeps giving and giving. You turned eleven bucks into like five meals, that's a win in my book any day of the week...
