Rant: Spent 2 hours trying to find a cheap way to meal prep chicken thighs and it shouldn't be that hard

I was split between slow cooking them for shredding or roasting for texture, and the roasting took like 45 minutes longer than every blog said because my oven runs cold. Has anyone else wasted half a Sunday just figuring out a simple protein prep?

Oven thermostats lie, that's the real problem.

Fix the damn thing yourself, it's not that hard. Grab a cheap oven thermometer from the store and stick it on the middle rack. Then crank the oven to 350 and see what the thermometer actually reads. Write down the difference and just add or subtract that number whenever you set the temp. I've done this with every oven I've owned and it saves so much burnt food and wasted time. Most ovens are off by 25 to 50 degrees, it's wild how bad the factory calibration is. Once you know your oven's lie, baking gets way more predictable and your food actually turns out right.
