Cutting board epiphany while breaking down a hog last month
Last month I was doing a 200 pound hog at the shop in Greenville. My cutting board was this old plastic board that I've used for years, and I always griped about how much the meat slid around. Then my helper, a retired guy named Dale, handed me a towel wet with vinegar and told me to wipe the board down first. I did that for the whole breakdown and my knife bites were so much cleaner, zero slipping. Has anyone else tried wetting their board with vinegar or something before a big cut? I felt like an idiot for not figuring that out sooner.

That old plastic board sliding around is the worst. I felt the same way for years until someone showed me to dampen a towel with water and lay it under the board first. It doesn't work quite as well as vinegar, but it helps some. The meat still slips on dry plastic, that's for sure. I bet you felt pretty dumb when Dale handed you that towel, but that's how it goes, sometimes the old guys know a trick that saves your whole day.
