Debate: hand-tied roasts vs. netted roasts for even cooking?
I used to swear by hand-tied butchers twine for pork shoulders until I switched to those elastic nets about 2 years ago at the shop off Main Street. The net holds shape way better during a slow roast, but I miss the control of tying it myself for weird cuts. Anyone else made the swap and stuck with one side?
