Finally found a use for beef heart besides grinding into burger

I always thought beef heart was too tough and weird to do anything special with. Been a butcher 8 years and just chucked them into the trim bucket. Then a customer asked me to save one because his grandma makes a stuffed heart recipe from the old country. I tried it myself last Sunday - cleaned it out good, stuffed with garlic parsley breadcrumbs, braised for 3 hours in tomato sauce. Came out tender like a pot roast. Now I set them aside for people who ask. Anyone else got a weird cut that surprised you once you tried cooking it right?

Try stuffing it with chorizo and manchego next time, blew my mind.

Oh hold on, don't you mean stuffed with chorizo and manchego? That's a great idea but I think you've got the spelling a bit off. It's manchego, not manchego with a weird spelling. Chorizo is the easy one, everyone knows that one. But seriously, that combo sounds amazing. I'd probably add some roasted peppers or onions in there too to balance it out. Just a thought.
