Had a talk with an old school butcher last week that stuck with me

I was breaking down a forequarter at the shop and this guy who's been cutting meat for 40 years watched me for a minute. He said I was fighting the knife instead of letting the seams do the work for me. He showed me how to follow the natural fat lines instead of forcing my cuts straight through. Made me realize I've been overcomplicating something that should be pretty simple. Anyone else had a moment where a small tip from an older butcher totally changed your approach?

So did he actually walk you through the whole motion or just yell it at you while you were working? I'm curious if he stopped and physically moved your knife hand or just pointed from the side. Cause I've had old timers give me advice that was basically a riddle until I watched their hands do it themselves. What was the first seam you learned to follow after he showed you?

Wait, he actually grabbed your hand and moved it for you? That's kind of wild honestly, I've never had someone physically guide my hand like that before. Usually it's just yelling from across the room.
