I finally noticed my knife angle was off after 12 years
Was breaking down a pork shoulder last week and a customer asked why my cuts looked ragged compared to my apprentice's. Turns out I've been tilting the blade too flat this whole time, anyone else have a moment where a simple comment made you rethink something you'd done forever?
