Just realized how much the 'nose to tail' talk has changed since I started
I heard a chef on a podcast say 'offal is over' and it hit me that the trendy push we saw a decade ago has really settled into just normal, good practice. Anyone else feel like the conversation has moved past the buzzwords and back to the basics?
