Knife sharpening debate: wet vs dry stone

I've been using wet stones for 8 years because that's what my old mentor showed me. Last week a customer handed me his knife and said the edge feels 'mushy' compared to dry stones he uses at home, and now I'm second-guessing everything. Anyone else dealt with this and got a preference based on the meat you're cutting?

People get stuck on gear instead of just learning to feel the blade.

Buddy of mine who hunts all the time swore by dry stones until he switched to wet for deer processing. Said the wet stone edge held up longer through the silverskin and didn't glaze over as fast when he was breaking down a whole animal. But he still uses dry for his pocket knives he uses on birds, claims it gets sharper faster for smaller game.
