Overheard a guy at the supplier say he dry ages his beef in a modified wine fridge
He said he hacked one of those dual zone units from Costco for like $300 and gets a solid 45 day dry age out of it. I've been using a $2k dedicated cabinet, so that got me thinking. Anyone try this or is it just gonna wreck the fridge and smell bad?

What's the humidity like inside after a couple weeks? Seems like that's where most of these DIY setups fall apart.

@derek_brown28 you're right, humidity's the real killer. Mine turned into a swamp after week two.
