Stopped by an old shop in Omaha and the case was all pre-packed trays
I was visiting family and walked into a butcher shop that's been there since the 80s. The whole front case was just factory sealed packs, no whole cuts in sight. The guy behind the counter said they switched over about two years ago to cut down on labor. It made me think of my first job where we broke down two whole sides a day by hand. I miss seeing the skill on display and talking to customers about different cuts. Does anyone still run a case with fresh cuts in a bigger city anymore?

Ugh, that's such a bummer. It feels like everything's getting pre-packed and sanitized, even the good stuff. You just lose the whole soul of the place.

Totally, it's like they're just selling the idea of a place now. I went back to my favorite old record store and it felt like a museum gift shop.
