Swapped to a half wheel of parmesan instead of pre-grated and it's a whole different game
I used to buy those bags of pre-grated parmesan for my shop till last month. A customer who runs a deli in Chicago told me I was losing money and flavor. I did the math and a 22 pound half wheel costs me $180 but yields way more than the bags for about the same total. The texture is better for slicing into steaks too. Anyone else made the switch and notice a difference on the block?

Totally agree, made the same switch a few months back and it's night and day difference in taste and texture. The pre-grated stuff just doesn't melt the same way.

My aunt used to swear by those pre-shredded bags for her mac and cheese. Then one Thanksgiving she forgot to buy them and had to grate a block of cheddar by hand. She was annoyed at first, but now she won't touch the bagged stuff. Says it's got that powdery coating that makes everything taste a little off. I still use the pre-grated for tacos though, call me lazy I guess.
