That Saturday shift where everything went wrong with a single lamb order
Last Saturday I got a whole lamb from a new supplier and it was supposed to be a simple breakdown. But the fat cap was twice as thick as normal and there was bruising all down the hind leg I didn't notice until I had it half cut. Has anyone else dealt with a supplier sending meat that looks okay on the outside but is a mess underneath?

Man that blood pocket thing is the worst, I had one burst on me and it looked like a crime scene.

32 pounds of fat cap on a lamb that was supposed to be around 10? I cut into a hind leg last month and found a big pocket of blood. Made a mess on the cutting board and ruined a good portion of the meat. The supplier swore up and down it was just a bruise from transport but I know better. They gave me a discount on the next order but I still had to toss a lot of wasted trim.
