Took me three full days to break down one stupid steer properly

Tbh I've been cutting meat for about eight years now and I thought I had everything figured out. But last Tuesday I got this massive 1,200 pound steer from a local ranch near Austin and the fat cap was just ridiculous. I kept losing my seam because everything looked the same and I ended up hacking through a joint I should've popped clean. It took me from 6 AM to almost 7 PM on day one just to get the primals separated. Day two I screwed up the ribeye roll and had to trim like four pounds of silver skin off because I didn't follow the natural line. By day three I was so tired I almost cried when I saw how much scrap I'd made. Has anyone else had a single animal just kick your butt for no good reason?
