Tried a vintage hand plane on some oak last week and it was a mess
Picked up an old Stanley No. 5 at a yard sale for $20, thinking it would be a fun throwback. After a full afternoon of trying to get a clean shaving, I just got tear-out and frustration. I learned that the sole was way out of flat, something I didn't even think to check on an old tool. Anyone know a good shop in the Tacoma area that can re-surface a plane like that?

You're blaming the tool but it's probably your technique. Vintage planes work fine with a sharp iron and proper setup. People used them for decades without machine shops. A warped sole can often be worked around by adjusting the chipbreaker and taking lighter cuts. Spending money to flatten it seems like a waste when you could just practice more.

My grandpa's old plane was warped and he just made it work.

Honestly, that "make it work" attitude is how we ended up with so much amazing old furniture (and knowledge).
