Finally learned why my sauces kept splitting after 11 years on the line
Last Thursday during prep I was whisking a hollandaise and it broke for the hundredth time. My sous chef walked over, turned off the heat, and told me to pull the pan off the burner before adding the butter. Turns out I was keeping it on low the whole time, which was way too hot for the egg yolks. I had always blamed the butter temperature or my whisking speed, never the heat source. Now I mount the pan off the flame for the first 30 seconds and it comes out silky smooth every time. Has anyone else had a basic step like that totally fly under their radar for over a decade?

Funny how the same blind spot shows up everywhere, right? I did the same thing with my coffee pour over for years, always blamed the beans or grind size when my brew tasted off, then realized I was just pouring water way too fast. Once I slowed that down, everything changed. It kind of makes you wonder what other tiny habits are quietly messing up stuff we do every day, like how people set their thermostat and never touch it again even though the house gets freezing at night. Sometimes the fix is just stepping back and questioning the thing you never question.
