Had a chat with a dishie that made me rethink my prep flow

Last night one of my dishwashers, a kid named Marcus who's been here maybe 3 months, told me he liked how I organized my station but thought I was wasting time pulling all my veg ahead of the protein. Said it just sits there wilting while I'm searing meat. Honestly it hit different because he's right. I've been doing it the same way for like 6 years and never questioned it. Anyone else ever get a tip from a newbie that actually made you change how you work?

Exactly this. Marcus might be new but he's seeing the station with fresh eyes. I had a similar wakeup call when a new line cook pointed out I was chopping herbs way too early and they'd lose all their punch by service. Switched to grabbing basil right before pickup and it made a huge difference in the final plate. Sometimes we get so stuck in our routines we stop looking for better ways.
