My local grocery store butcher can debone a whole salmon in about two minutes flat. That speed comes from doing it thousands of times, where the repetition builds its own kind of precision. It's the same with baristas making perfect latte art in a rush, or a mechanic swapping out tires. The pattern I see is that for a lot of skilled jobs, speed and precision stop being separate things after enough practice. The muscle memory takes over, and doing it fast is the only way to do it right.
