My backup prep fridge died during a Friday night rush

It happened about a month ago at the restaurant, right as tickets started piling up. I had a full hotel pan of blanched green beans and prepped mirepoix in there that I needed for the night. I had to quickly move everything to the walk-in, which threw off my whole station flow for a solid two hours. Has anyone else had a fridge fail mid-service and have a good plan to stop it from wrecking your night?

Keep a couple of those big insulated coolers on hand just for this, they can buy you time to move stuff without losing your spot.

Coolers just take up space you could use for more gear... seems like a hassle to me, @uma_baker88.

You said you had to move everything to the walk-in. That's the real killer, running back and forth. How much space do you actually have cleared and ready in your main walk-in for a full panic transfer like that? If it's not a dedicated spot you can hit in one trip, you're already screwed.
