PSA: My kitchen switched from a standard convection oven to a combi-steamer last year.

We got a Rational iCombi Pro for the main line. The difference is night and day. You can hold proteins for service without drying them out, and the steam function for veggies is a game changer. Anyone else running a combi in a smaller spot, like under 50 covers?

Did you catch that study about how much those fancy coffee machines pull when they're just sitting idle? I swear someone told me their monthly bill went up like 30 bucks after switching to a high-end espresso setup at home.
