Rant: I tried a new knife sharpening service in Phoenix and it was a total waste

They used a pull-through sharpener that wrecked my edge, while my old guy with a whetstone gets it razor sharp every time. The difference was clear after one use on a bushel of onions. Anyone have a good sharpener they trust?

Actually, I've had pretty good luck with a pull-through before. I mean, it's not a whetstone, but mine gets the job done for basic kitchen stuff. Maybe it depends on the brand or something.

My buddy's knife got RUINED the same way.

Yeah that sucks, happened to my old chef's knife. I soaked it in white vinegar for like 10 minutes and then went at it with a paste of baking soda and water. Took some elbow grease but it got most of the spots off without wrecking the edge. A little mineral oil after to protect it and it was good as new, well, almost lol.
