Serious question, my walk-in cooler died on a Friday night and I finally trust the little thermometer now
Our old True unit at the diner on 5th quit around 9pm last Friday with about $600 of product sitting in it. I used to think those $12 fridge thermometers were pointless since the box display looked fine, but the display read 38 when the probe said 51 by midnight. Turns out the compressor was short cycling and the door gasket was shot. How do you all handle a cooler failure mid-service, do you toss and cut losses or move everything to the backup right away?
