Spent last Saturday at a pop-up kitchen class in Portland and it wrecked my old prep routine
The instructor showed me how she holds a chef's knife with her thumb and index finger pinching the blade right above the handle, and I sliced through a case of bell peppers in half the time. Has anyone else tried that grip and had it totally mess with how you thought you knew knife work?

People get really dramatic about knife technique like it's life changing. It's just a grip, not a whole new worldview. I've used that pinch grip for years and yeah it helps with control but I wouldn't say it "wrecked" my prep routine or cut time in half. More like a small improvement, not a revolution. And logan632's point about wearing down the edge faster is silly. The steel gets dull from hitting the board, not from where you put your fingers.
