That stat on how many kitchen knives get thrown out each year floored me

I was reading a piece from the National Restaurant Association last week and it said restaurants toss over 40 million pounds of knives annually. That really caught me off guard. Makes you think about all the old blades I just chucked in the bin instead of sharpening. Has anyone else started sending their dull knives out for professional sharpening instead of replacing them?

Right?! I started sending mine out and it's Honestly way cheaper than buying new ones.
