The night the walk-in compressor died at The Gilded Fork
We were three hours into a 200-cover Saturday at The Gilded Fork when the walk-in temp alarm went off. The compressor had a total failure, and we had about $8,000 of product starting to sweat. I had to send two line cooks to buy every bag of ice from three different gas stations to pack the lowboys while we rerouted the night's menu. Has anyone else had to improvise a cold storage fix in the middle of service?

Our ice machine once died, so we used frozen peas as ice packs (a weird but true story).

Frozen peas are the real deal for ice packs, @bettyperry. I did the same thing when my freezer was on the fritz last summer. It's a solid backup plan that actually works pretty well.

Oh man, @bettyperry, that's such a good idea. I once used a bag of frozen corn for a sprained ankle. It worked great but we had soggy corn for dinner.
