The regular who demanded his steak well done with ketchup, then complained it was tough
A guy at my spot in Portland ordered a ribeye well done, I suggested medium rare, he laughed and said 'I pay for the food, not your opinion.' He sent it back twice before asking for ketchup, and I still think about that exchange when I feel like pushing back on customers. Do you prioritize the guest's preference even when you know the result is bad, or do you stand your ground as the expert?

Ugh, that guy sounds like a nightmare! Do you think he actually liked the ketchup steak, or was he just trying to win some weird power struggle with you?
