The regular who demanded his steak well done with ketchup, then complained it was tough

A guy at my spot in Portland ordered a ribeye well done, I suggested medium rare, he laughed and said 'I pay for the food, not your opinion.' He sent it back twice before asking for ketchup, and I still think about that exchange when I feel like pushing back on customers. Do you prioritize the guest's preference even when you know the result is bad, or do you stand your ground as the expert?
