Hot take: I almost gave up pour over after my kettle hit 212F last Tuesday
Boiling water scalded my grounds and the cup tasted like burnt cardboard, so now I wait 30 seconds off the boil and it's night and day. Anyone else timing their kettle or do you just go by sound?
My buddy Dave did the same thing at his place in Denver last month, kept his kettle right on the stove until it was screaming and poured straight into the V60. Took one sip and dumped the whole cup in the sink, said it tasted like an ashtray mixed with wet paper. He swore his beans were stale and almost tossed the bag, but I told him to just let the water sit for 45 seconds next time before he pours. He tried it the next morning and texted me at like 6am saying it was a totally different drink, sweeter and you could actually taste the caramel notes he paid for. Now he swears by counting in his head instead of trusting the whistle.
