I measured my pour over water for 30 days straight and the number that came back made me laugh
I kept guessing on my pour over and getting a sour cup half the time. So I started weighing my water every morning for a month. Turns out I was dumping in 380 grams on average, not the 300 I thought. That extra 80 grams was watering down the whole brew and I had no clue. My coffee got way better once I actually looked at the scale. Now I'm wondering if my grind size has been off this whole time too. Anyone else find out they were way off on a number they swore they knew?
That line about dumping in 380 grams when you thought it was 300 is wild because the scale number is the easy part. The sneaky one is your water temp dropping while you're busy staring at the scale. A gooseneck kettle loses heat the whole time you pour, so if your brews run long the water hitting the bed is cooler than you'd guess, maybe 10 or 15 degrees below where it started. That alone can push a cup sour or flat even when your ratio is perfect. Try sticking a cheap thermometer in the kettle right before you pour and again at the end. Easy to check and it costs nothing.
