Paper filter vs metal mesh on my V60, I switched and now I get it

Honestly, I used paper filters for like 3 years on my V60 because I thought metal mesh would let too much silt through. Then a buddy from work let me borrow his mesh cone for 2 weeks and I was shocked at the body difference. The cup felt heavier and almost syrupy, but I missed that clean bright finish I got with paper. I ended up going back to paper after day 10 because my stomach couldn't handle the oils, but I kept the mesh for cold brew. Has anyone else found a middle ground, like using mesh for one brew and paper for another on the same beans?
