Pour over grind size was sabotaging my mornings for 6 weeks

I finally watched a video from a cafe in Austin and realized my coffee was taking 5 minutes to drain because I was grinding way too fine, they said it should be around 3 minutes max. Switched to a coarser setting this week and the taste is night and day, has anyone else had a similar wake up call with their grind?

Man, that 5 minute drain sounds brutal. I actually read something last month about how extraction time is more of a guideline than a hard rule, but yeah, 5 minutes is way past the point of overdoing it. I had a similar thing happen with my chemex where I was so scared of sour coffee that I kept going finer and finer, and it just made everything bitter and muddy. It took me way too long to realize that 3 minutes is really the sweet spot for most pour overs, and once I backed off the grind, the whole cup opened up. It's wild how such a small adjustment can completely change your morning.
