Stayed at a cabin in Asheville last month and the owner had a Chemex sitting right next to a Mr. Coffee
My wife and I rented a place outside Asheville for 4 nights and the kitchen counter had both a Chemex and an old Mr. Coffee machine side by side. I figured the Chemex was just for looks until I found a hand grinder and a note saying the drip machine was only for guests in a hurry. I tried the Chemex twice and my coffee came out weak and sour both times, so I ended up using the Mr. Coffee every morning feeling like a total sellout. Now I'm wondering if my pour was too fast because I don't have a gooseneck kettle at home, just a regular one. Any tips on pouring without the fancy spout, or should I just buy the kettle?
