Finally figured out why my morning pour-over was tasting bitter
I kept getting this harsh, bitter cup even though I was using good beans from a local roaster near Portland. Last week I realized my water temp was way too high, I was just boiling and pouring right away. Tried letting it sit 30 seconds off the boil and the difference was night and day. Has anyone else had a simple tweak like that fix their whole routine?

Oh man, water temp is a sneaky one! So when you let it sit for 30 seconds, are you covering your kettle or leaving it open? I've tried both and I swear the covered one holds heat way different. Also, what kind of beans were you using? Like, darker roasts tend to be more forgiving with high temps in my experience (or maybe I just got lucky). I'm curious if your roaster gave you a specific brew temp recommendation or if you just dialed it in by taste.
