I finally fixed my sour pour overs with a simple spin trick
For months my pour overs came out bitter and uneven no matter how slow I poured. Then I tried stirring the slurry once with a chopstick right after the bloom instead of swirling the whole brewer. Have any of you guys tried stirring vs swirling and noticed a difference?

Stirring is fine for some people, but a gentle swirl actually does more for me. The chopstick could easily channel the water down in one spot if you're not careful, which would explain that bitterness you were getting before. Swirling evens out the whole bed without disturbing the grounds nearly as much. There's a reason most competition brewers stick with a light spin rather than poking at it with a stick. Sounds like you found what works for you though, which is really all that matters with pour over.

Swirling saved my brew too @sageallen, but try this: tap the brewer once instead.
