I finally understood why my morning pour over tasted different
Three years ago a barista in Portland told me to pay attention to my water temperature. I blew it off because my coffee tasted fine at the time. Last week I picked up a cheap kettle with a thermometer and realized I was brewing at almost 200 degrees instead of 195. That small change made my cup smoother and less bitter. Has anyone else noticed a big difference from just adjusting the heat on their pour over?

Kettle thermometers are sketchy at best, I wouldn't trust them too much. A cheap digital probe thermometer is way more accurate, and you might find your temp is actually closer to 205 when you check with that. Water temp matters but I think grind size and pour technique are way bigger factors for bitterness.

What's your go-to temp then @morgan512? I just use a cheap probe. Way easier.
