I thought dialing in my grinder for a new bag of beans would take 10 minutes, but it took me three full pots and most of a Saturday morning to finally get it right.

The Ethiopian beans from that new roaster in Portland were so much more sensitive than my usual stuff, and I wasted almost half the bag before I realized my water was 5 degrees too hot, which a barista friend finally pointed out after I texted him in frustration.

Man, that sounds like a brutal morning... I'm shocked the water temp made that big of a difference though. Did your friend say why those beans were so picky about it? I always just use water right off the boil and never really thought about it.

Yeah, some beans are total divas.

My last attempt at dialing in a new bean had me making coffee that tasted like hot dirt water for a week straight. I was so stubborn about it being the grinder that I never even checked the kettle.
