I thought the 'bloom' step for pour-over was just hype
I skipped it for months, but after a friend in Denver timed a 45-second bloom with a scale, the coffee tasted way less bitter. What's one thing you thought was silly but actually works?

Used to think weighing beans was overkill. My cheap kitchen scale changed that. Way more consistent cups now.

See this all the time with little steps in a process. We skip them thinking they're just for show, then find out they're actually the part that makes the whole thing work.
