My brother told me to try a 4-minute bloom for my pour-over and I thought he was nuts.
He insisted my usual 30-second bloom was why my coffee tasted sour, so I tried his way with my Chemex last Tuesday. The next cup was way smoother and I haven't gone back. Has anyone else found a longer bloom time makes that much of a difference?

Wait, what kind of beans were you using? I had the same sour problem with a light roast and a longer bloom totally fixed it.

Hold up, a longer bloom fixed a sour light roast? That's wild, mine always got worse if I went past like 45 seconds. Maybe it's just me but I swear light roasts are a whole different beast. What was your total brew time after that long bloom?

Got a buddy who does this wild thing with light roasts where he blooms for like 90 seconds and it totally changed his game. He was getting that same sour lemon punch every morning until he tried it on a whim, now his cups are smooth as anything. Total brew time ends up around 4 minutes sometimes which sounds crazy but the flavor is there. Have you played with your water temp at all though?
