My pour over game changed after I stopped timing everything
I used to set a timer for every single pour, like 45 seconds for the bloom and then 30 second intervals, because some YouTuber in Portland swore by it. Last month I forgot my phone in the car and just went by feel, watching the bed flatten out and the drip slow down naturally. Turns out my brew got sweeter and less bitter, and now I only use the timer to make sure I dont let it drain bone dry. Anyone else ditch the stopwatch and just vibe with the grinds?

Ditch the timer and watch the coffee instead. The bed settling and the drip pace tell you way more than a stopwatch ever will, especially if your beans are fresh from a local roaster. I do keep a rough mental note for the bloom just so I don't rush it, but after that it's all about the flow and the color. Trust your hands and your eyes, you'll get a better cup than any number can give you. Once you stop staring at the clock, you start actually paying attention to what's happening in the dripper.
