PSA: Dialing in a new grinder took me a full month of bad coffee
I got a new hand grinder for my birthday (a Timemore C2, to be exact) and figured it'd be a quick switch. Nope. For three solid weeks, every single cup was either way too sour or super bitter. I was going through a bag of beans a week just testing. I finally realized the issue was my water temperature, not the grind size at all. My kettle was actually running about 15 degrees cooler than it said. Anyone else have a simple fix that took forever to find?

A month seems like a long time to blame the grinder. The C2 is pretty consistent. Water temp is a big factor, but grind size and your pouring method are just as important. It's usually a combination of things that needs fixing, not one single switch. Dialing in is about learning to adjust all the variables together.

That reminds me of when my scale battery was dying. Was blaming stale beans for a week before I noticed the numbers jumping around.
