Serious question, did you know expired beans can still look fine?

I was pulling shots last weekend for about 6 months with the same bag of beans from a local roaster in Portland. They looked normal, smelled fine, but every drink had this dull bitter taste I couldn't fix. Then a barista friend stopped by and pointed out the roast date was 8 months old. I never even checked the date before. Has anyone else missed old beans because they didn't think to look for a date?

Oh man, that's such a bummer! I once had a bag of beans from a grocery store sale that I grabbed because the bag looked totally fresh and smelled amazing in the shop. Turned out the roast date was like 10 months back. I was making lattes for weeks thinking my milk frothing was off or something, but nah, it was just those dead beans the whole time. Now I'm that person who checks dates on everything, even my salt.

You ever notice how stale stuff can trick you into thinking you're the problem? I did the same thing with a bag of coffee from a random gas station once. It was on sale for like two bucks so I grabbed it thinking what a steal. Turns out it was so old it had this weird dusty taste no matter how I brewed it. I kept adjusting my grinder thinking I messed up the settings but nope just dead beans from like a year ago. Now I'm that weirdo sniffing bags in the aisle like a lunatic. You ever accidentally buy something that old and just keep blaming yourself?
