Shoutout to that little coffee cart in Seattle that ruined my home setup

I was there last fall, and the barista made me a pour-over with a coffee from Guatemala. I asked for my usual light roast, but she said 'trust me' and gave me a medium. The flavor was so deep and sweet, nothing like the weak, sour cups I was making. Now my fancy grinder and gooseneck kettle feel pointless because I can't get that taste. How do you figure out which roast is right for you when you're used to just one kind?

Ever read that thing about how coffee roasts are like cooking a steak? A light roast is a quick sear, you taste the bean's own flavor. A dark roast is well-done, you taste the roast itself. That medium roast she gave you is like a perfect medium-rare. It brings out the bean's natural sugars without burning them away. Maybe you just never had a good medium roast before, and your gear is fine. You might need to try a few different medium-roast beans to find that sweet spot again.

Honestly I always thought that steak comparison was a bit silly, but you're right. It makes sense when you put it that way. I'll have to give a few more medium roasts a fair shot.

Never really got the steak thing until now. It actually makes a lot of sense. Might have to give medium roasts another look.
