Talked to a barista about why I buy dark roast
Guy at my local shop in Austin said dark roast is just burnt beans covering up defects. Asked why I never try the light roasts. Hit different because he was right. Anyone else switch roasts after hearing something like that?

My morning cup at Texas Coffee Traders changed after a barista named Miguel told me the same thing last fall. I was loyal to their Viennese roast for years, then tried their light Ethiopia and realized it actually tasted like blueberries and flowers instead of just "coffee." It kind of stung at first, like someone telling you your favorite shirt is ugly, but now I mix light and medium roasts and actually taste the differences.
